Just desserts

Here's one of my recipes that I like to make and freeze to have on hand for morning/afternoon tea or even a dessert on short notice. We like to add a big dollop of cream when used as a dessert :)

Carob brownies (makes 24)
3 C spelt or wholemeal flour
2 C buttermilk/kefir/yoghurt
3/4 C butter, softened
1 1/2 C rapadura/muscovado
4 eggs

1 T vanilla

1tsp sea salt

3/4 C carob powder

1 T baking powder

1 C chopped pecans ( I often leave this out when I don't have any in the pantry)

Soak flour with buttermilk, kefir or yoghurt for 12 to 24 hrs in a warm place. Cream butter with rapadura. Add eggs, vanilla, salt, carob and baking powder. Blend in soaked flour and fold in nuts. Pour into a buttered and floured pyrex pan (roughly 20 x 30 cm). Bake at 180' for about 40 min. Allow to cool thoroughly and cut into squares.
