Eggs


Here's the relative of scrambled eggs, frittata and omelette! I have kind of combined ideas and we often have this for tea with salad as it's very easy and quick. Use as many eggs as you like, I do about 8 or 9 for all of us. Whisk them up in a bowl and add fresh diced garlic, a nice splash of cream, grated cheese, and miscellaneous vegies from the fridge eg grated zucchini, small cuts of broccoli, diced tomato, sliced olives, spinach, shallots. If you have any leftover egg whites to use up- they make it extra light and fluffy. I've also added leftover sausage before, just slice in thin rounds first. Stir the mix up and pour into heated, and oiled wide based frypan. Leave it to sit (NO stirring) until the base is firm and golden- test by just gently lifting a side with the spatula. That's usually about 10 min (while you make a salad, see what the kids are up to etc). Then to finish cooking the top, just put the whole frypan under the grill for a few minutes till golden. If your frypan handle doesn't withstand the heat- just wrap in foil first.
